I was late to the avocado toast movement. We lived in California when the trend started and, like many things California, I couldn't be bothered. Then I had avocado toast in an LA restaurant that was topped with deep fried capers and I began to think that there might be something to this after all and came up with a version that worked for me.
I really should have had one toast made with half an avocado, but I justified my greed by telling myself that I will be away for the weekend and didn't want to waste the other half..
1 ripe avocado
1 large or 2 regular slices of your favorite bread
1 tsp preserved lemon paste or 2 tsps chopped preserved lemon
Pinch of cumin
Juice from 1/2 lemon
Finishing salt like Maldon salt
Put your bread in the toaster to toast.
Peel and pit the avocado. Add it to a bowl and mash it roughly. Stir in the preserved lemon, the cumin and the lemon juice.
At this point your toast should pop up. Spread it thickly with your avocado mixture and sprinkle with salt.
Under five minutes to make.
