More zingy, less claggy than hummus, this coriander flecked, lemon flavored spread is delicious. I made it to go with my Veggie "Club" and it brought the lunch to life, the end result being a truly excellent sandwich. It was also quite lovely for lunch the next day, served on its own merit with raw vegetables in which to dip it.
Makes about 1 cup.
1 cup garbanzo beans drained of all but one tablespoon of the aquafaba (liquid in the can)
1/2 cup coriander leaves
1 Tbsp roughly chopped white onion
Juice and zest of one large lemon
1 Tbsp preserved lemon paste
1/2 tsp your favorite hot sauce
Salt to taste
Place all of the ingredients in a blender along with one tablespoon of the aquafaba and one tablespoon of water. Blend well. I wanted some texture but if you like a completely smooth spread, add an additional tablespoon or so of water and blend the spread longer.
Taste and add more lemon or salt if needed.
