This might sound like a pretentious name for a salad, but considering it was all I wanted to eat after over indulging over the holiday season the name, once it occurred to me, stayed in my mind.
This is a pretty simple salad, but curiously delicious and refreshing. I made it several days in a row as it really appealed to me coming off my holiday diet.
1/2 can cannellini beans, rinsed and drained
1/3 English cucumber, quartered and diced
1/2 red pepper, deseeded cut into pieces the same size as the cucumber
10 whole grape tomatoes or 4 cherry tomatoes, quartered
1 Tbsp chopped herbs (I used a mix of Italian parsley, dill and tarragon
1 Tbsp olive oil
2 tsp red wine vinegar
Pinch of salt
Mix the olive oil, red wine vinegar and salt in a large bowl. Tip in the cannellini beans and stir to combine. Set aside to marinate while you clean and chop the other vegetables.
Add the vegetables to the bowl and stir to combine.
Chop your herbs and add to the bowl as well. Stir to combine and set aside for five additional minutes to marinate.
Stir again to redistribute the dressing and dig in.
