During my recent whirlwind trip to NYC, I had SOOOOO many good things to eat; some of which I will try to recreate in the weeks to come. I did not try this sandwich, but saw its description on a menu and it stayed with me enough so that I made my own version once I got home. I have no clue what the original tastes like, but mine was really good.
2 slices of your favorite bread
1/3 cup canned chickpeas, drained
2 tsps finely chopped red pepper
2 tsps finely chopped cilantro (or Italian parsley if you do not like cilantro)
1/4 tsp garam masala
1 tsp mango chutney
2 tsps mayonnaise
Splash of hot sauce
Slices of tomato and handful of washed greens to garnish
Mix the chickpeas with the red pepper, cilantro, garam masala, chutney, mayonnaise and hot sauce. I used a potato masher and roughly mashed some of the chickpeas while leaving the rest whole to add some texture to the dish. Next time I will mash further.
Spread this mixture on one slice of the bread and garnish with tomato and greens before adding the other piece of bread. I did not feel that salt was necessary but check for seasoning before you spread the chickpea mixture on the bread.
